I made a Cake!!

Guess what guys? I made a cake! If you know me then you will know I have always loved baking and I was determined to open up a shop of my own with one of my best friends Rebecca, but in year 8 I stopped baking and I regret it now. The other day though, I was watching The Great British Bake Off ( like I do every year!) and I saw a cake and thought "you know what I could make a cake like that! "(Btw I don't talk to myself. This was in my head, so it is socially acceptable :)). So I ran downstairs, googled a recipe (Mary Berry's Classic - Victoria Sandwich) and started to bake. Later I took the cake to my Auntie's house where I cut a big chunk and scoffed it whilst watching James Corden do syncronised swimming! So, I bet you are wondering why I am telling you this? Well I am going to teach you how to make it!

Ingredients
==========
  • 225g soft butter
  • 225g caster sugar
  • 225g self-raising flour
  • 2 tsp baking powder
  • 4 large eggs
  • 175g of icing sugar
  • 75g of butter (For the icing!)
  • A jar of jam

Tools You may need
================

  • A large Bowl
  • A cake tin
  • An electric whisk (optional)
  • A pallet Knife (optional)
  • Some greaseproof paper

Instructions
============
Step 1 -  Preheat your oven to 180 degree's/fan170 degree's/gas mark 4. Grease your baking tin with butter, then place a circular peice of greeseproof paper at the bottom of the tin making sure it is stuck down. Then place this aside.

Step 2 - Put your butter in a mixing bowl and continue to add the caster sugar, self-raising flour and baking powder. Now add the eggs one at a time before mixing for 2 minutes using your electric whisk or wooden spoon.

Step 3- Once your ingredients are well combined, scoop your mix into circular tin and bake for 30-40 minuets or until golden brown! When it's golden brown let it cool for 20-30 mins.

Step 4 -  Carefully remove your cake from it's tin and slice in half.

Step 5 - Now to make the buttercream!  Beat 75g of butter for at least 3-5 mins (this gives it a lighter and more white overall look.) Then add 175g of sifted icing sugar whilst mixing at the same time. Mix the mixture for a further 1 minute.

Step 6 - Spread both side's of your sliced cake with an even layer of buttercream and jam, then sandwich the sides together. Add a dust of icing sugar on top and you have your very own.......
CAKE!!
Step 7- Enjoy a slice of your yummy cake!

I hope you enjoyed making this cake and eating it as much as I did! Let me know if you make one yourself , good luck!
India xx
